Consider letting the FD/EMS play as cops and vice versa, so that they can learn and see the aspects of each others job.

What other training is most important to you now that you have completed this course?

Continued training with more realistic scenarios and current communications infastructure that are in place. This would be a way to identify where the infastructure is lacking.
